The first recorded Tom Collins-style recipe dates to 1869, and after mixing a batch of the “original,” the folks at Cannonborough will take guests to London, where the cocktail begins to take shape in its current form. Then head back stateside to 1880s New Orleans to try a Ramos Gin Fizz before jumping to the 21st century to sample two modern takes on the classic and try your hand at collins mixology.
