Mick Matricciano of Cannonborough Beverage Co. set out to bring interest, freshness, and playfulness back to the world of soda. With the help of Lowcountry farmers, each soda contains pressed local juices, herbs, and fruits that bring soda back to its natural—and Southern—roots.

Tom Collins Master Class

Together with the team at Charleston, South Carolina’s Cannonborough Beverage Co. sip your way through the history of the collins cocktail—a swirl of fresh juice, sugar, spirit (most often gin), and soda, served in the now eponymous tall glass. The first recorded Tom Collins-style recipe dates to 1869, and after mixing a batch of the “original,” the folks at Cannonborough will take guests to London, where the cocktail begins to take shape in its current form. Then head back stateside to 1880s New Orleans to try a Ramos Gin Fizz before jumping to the 21st century to sample two modern takes on the classic and try your hand at collins mixology.

Play soda jerk with the Cannonborough crew, learning step by step to bottle your own all-natural soft drinks. They’ll teach you how to handle fresh herbs, stone fruits, berries, citrus, and other soft fruits to make the flavorful simple syrups used to infuse your carbonated creations. The syrups have a myriad of other uses, though; take notes.
